My wife and I dined at Havana Blue located on the Marriott property but privately owned and operated. We were informed that this was the newest fine dining restaurant on island. We really enjoyed our experience. The decor is beautiful. Very cool, chic, yet relaxed. The cuisine is described as Latin-fusion and we were blown away by the menu. Very creative presentation on beautiful plateware added a nice touch.
The upbeat music, although a little loud, provides a lot of energy to the restaurant. The servers are all great looking kids who really want to please. We had to wait a little longer for our entrees b/c I ordered my filet well-done but it was well worth the wait!
Overall this was the best dining experience we had on St. Thomas and we ate at all of the fine dining restaurants. We will definitely go back as this was a dining experience to remember. This is definitely not a "hotel" restaurant. Amazing.
